Apiīn (Chem.), C24H14C13, findet sich in der Petersilie u. wird daraus durch Auskochen mit Weingeist dargestellt; ist ein leichtes, flockiges, fast farbloses, amorphes Pulver, welches bei 180° schmilzt u. bei 200° sich zu zersetzen beginnt; in kaltem Wasser kaum löslich, leicht in heißem; beim Erkalten gelatiniri die Lösung; auch die weingeistige Lösung bildet nach dem Erkalten eine Gallerte; charakteristisch ist seine blutrothe Färbung durch Eisenvitriol.
